Pasta is one of the things that are just so practical to put together in no time. These days of quarantine where the kitchen is at a full mode due to the fact that the kids have no school for over 4 months now, I truly look for easy dinners that can make everyone happy. Pasta is obviously one of them. What makes this dish healthy is the fact that we are using whole wheat instead of white flour pasta. And our herb here is thyme which is packed with iron, vitamin A, C, K, E, magnesium, and other minerals, health benefits such as strengthening the immune system, good for the mood, and muscles. If you don’t have fresh thyme use dry. But fresh is always best.

1). Warm-up a wide skillet on medium-high heat. Place olive oil and garlic and sauté for 30-50 seconds until golden brown. Add thyme and tomatoes and mix until the tomatoes are blistered and a bit soft.
2). Add ¼- 1/2 cup pasta water along with the cooked pasta and mix. Season generously with salt and pepper and optionally chili flakes.
(You may add vegan parmesan cheese or lemon zest if you wish.)
