One-Pan Creamy Lemon Pasta with Peas

This dairy-free creamy lemon pasta is one of my family’s most requested dishes lately. We really love pasta, and we love one-pot meals even more! This beautiful dinner or lunch can be ready in less than 25 minuets and you can feel good about yourself, indulging on something clean and delicious. Feel free to use any pasta of your choice to increase the nutritional level of your meal.

Ingredients:

2 tbsp olive oil

340 g bow tie pasta (https://amzn.to/3VX7JCi)

2 medium onions, chopped

4 fresh garlic cloves, sliced

6 fresh sage leaves

1 lemon, zested (https://amzn.to/3VO6OD0)

1 can full fat coconut cream (https://amzn.to/3xGMnzy)

2 tbsp nutritional yeasts

1 bag sweet frozen peas

4 cups water

Salt and pepper to taste

(more lemon zest to garnish, and crushed pepper flakes)

Directions:

1) Peel and chop your onion. Heat up a wide pan with 2 tbsp olive oil. Add the chopped onions and sprinkle with a touch of salt. Mix every minuet or so.

2) Peel and slice the garlic, and add it to the pan along with the sage leaves. Zest your lemon and add it as well. Mix everything until fragrant and nicely golden.

3) Add the coconut cream, frozen peas, nutritional yeasts, slat and pepper, mix, and add your pasta.

4) Add the water, mix, and bring to a boil. Lower the heat to simmer, and cover. Mix every 4-5 minutes.
Check for salt and pepper!
