Serves 3-4
It took me so long to get used to adopting tofu into my diet since the texture can sometimes be strange to some of us. But loving the kitchen so much, I kept experimenting with it until I’ve finally concurred both the textures and flavors I was looking for. Today, tofu is a big part of our life and my kids absolutely LOVE it! As you probably heard so many times “it is all about the technique and spices you put into it” and it is true.
This tofu shawarma is filling, flavorful and so delicious. You can serve it in a pita or baguette with tahini, amba (Middle Eastern Mango Sauce), salad and lots of fresh herbs. I kept it simple by serving it with a fresh salad and sautéed veggies on the side. But whichever way you choose, it is going to be delicious.
1). Wash, drain and pat-dry the tofu with paper towels. Cut into thin strips.
2). Heat up oil in a non-stick pan and place the tofu. After 2 minutes or so, add the garlic. Mix carefully so the tofu doesn’t break, and watch the garlic from burning.
3). Once the garlic is golden brown, add all the spices and mix constantly. Adjust salt and pepper and turn off the heat. Sprinkle fresh cilantro to your liking.
4). Serve with a simple lettuce tomato salad and drizzle tahini over both the salad and the shawarma.
For the veggies:
Use the same pan, add cut veggies:
1 onion sliced into moons
2 zucchini
1 pepper
6 baby bello mushrooms,
Sear for a few minutes, sprinkle cumin, salt, and pepper and serve.
