2 onions, roughly chopped
2 Carrots, peeled and cut into chunks
2 organic sweet potatoes, peeled and cut into chunks
1 small butternut squash, peeled and cut into chunks
6-8 cups water
1 tbsp dry thyme or 2 fresh sprigs
1 tbsp nutmeg
1/3 cup coconut cream (or 1/2 cup soy or coconut milk)
Salt and pepper to taste
You don't need much in order to have this cozy and comforting bowl of soup in your belly! Only maybe some rain and low temperature outside to make you want to get up from your sofa, and head to the kitchen to make this cozy and extremely delicious pot of soup. This simple and nourishing soup is one of the most popular soups in Israel, where I grew up. It has all the yummy orange vegetables we usually have at home. Carrots, sweet potatoes, butternut squash, some onions, garlic, and herbs. It is that simple. You must give it a try. And always feel free to adjust flavors after you bend the soup.
Let's get started!
1). Peel all the vegetables, cut them into big chunks and wash them under running water. Chop the onions and set them aside.
2). Place a soup pot over your stove on medium-high heat. Add the olive oil. Add the onions and mix until golden.
3). Add the vegetable chunks and continue sauteeing for about 5 minutes until starting to turn golden brown.
4). Add the water, season with salt, pepper, garlic powder, nutmeg, cover, bring to a boil. Simmer on medium-low for about 30-35 minutes until the veggies are fork-tender. Pull out the thyme sprig out of the soup.
5). Using an immersion blender, blend the soup until nice and smooth. Add your coconut cream OR milk and mix. '
6). continue simmering the soup for 10 minutes more and correct seasonings: salt, pepper, garlic powder, nutmeg.
7). serve the soup and garnish it with cilantro, a splash of coconut cream/ milk, nutmeg, and olive oil.

How much garlic powder do you put in? Is it much better with the coconut cream over coconut milk?
I would do 1 tbsp garlic powder for the pot. I think coconut milk is not overpowering, so its up to you, how much coconut flavor you love. I use whatever I have on hand, And if I use the cream, I put only a quarter of a can
“thyme” not “time” in step four.
