This simple yummy dish is a family pleaser!
It took me time to master the "one-pot-meal" thing when living a mainly plant-based lifestyle. Today I'm confident to say that when I have 20 minutes to serve lunch or dinner on the table, rice and peas will totally do the job for us. Peas are loaded with plant protein - 8 grams per cup! Add to the pot some carrots and a salad on the side and I'm one happy mama. Not only this is healthy, but this dish is really DELICIOUS! I hope you give it a try! 1) Place the rice in a bowl with some water to soak for 10 minutes.
2). Heat up a pot over medium-high heat. Add the oil and carrot and stir occasionally. After 2-3 minutes add the onions and mix until they are soft and a bit golden.
3). Rinse the rice really well, and add to the pot. Mix with the onion and carrots for a couple of seconds.
4). Add the frozen peas, water, salt and pepper, cover, and bring to a good boil. Reduce the heat immediately, simmer on low, and put a timer for exactly 15 minutes.
5). Turn off the heat, and leave the lid closed for another 10 minutes to allow the dish to come together.
6). Before serving, adjust salt, and if you wish, sprinkle some fresh cilantro and squeeze some fresh lime, and mix.
Serve hot with some fresh salad on the side.
