1.5 cups old fashioned rolled oats
1 cup organic brown rice crispy
1 cup walnuts (or 1/2 almonds)
1/2 cup raw pumpkin seeds
1/2 cup dark chocolate chips
1/3 cup coconut oil
1/2 cup honey
1 tsp vanilla
Pinch of salt
This easy 30 minutes chocolate granola is absolutely a must at our house. I love watching my kids enjoy every bite from the variety of the healthy nuts and seeds, and oats, all in one nourishing bowl that can be enjoyed and feel good about. I love serving it in different presentations and fruit combinations. This breakfast is nothing like store-bought granola. Once you make it you never go back. And the crunch!!! You’ll love it. Preheat oven to 340 F.
1). Place all the dry ingredients on a baking sheet lined with parchment paper. Mix.
2). Add the wet ingredients: honey, oil, vanilla. Mix.
3). Place in the oven and bake for 30 minutes, mixing halfway through.
4). Remove from the oven and let cool for 60 minutes or so.
5). Mix and place in an airtight container for up to 4 weeks. (I like to keep mine in the freezer as well)
Enjoy with some yogurt, fruits, and milk.
