Whole Wheat Spaghetti with Garlic and Veggies

This easy pasta is so fun to prepare for any given occasion. You came from work and dinner is not ready? Guests are coming and you don’t know what to serve? Hosting a party tomorrow? This pasta dish is ideal. Use any veggies you have in the fridge and you’ve got a nutritious and satisfying meal in no time.

 

Instructions

1). Cook pasta according to package instructions, add 1 Tbsp salt and keep ½ cup from the cooking water, set aside.

2). Start with a hot and wide pot or skillet, add the oil and garlic and mix for about 30 seconds until golden.

3). Add the cabbage and carrot and mix for about 2 minutes.

4). Add the zucchini, sprinkle some salt, pepper, paprika, and turmeric. Mix and cover for 1 minute.

5). Add the pasta with some of the cooking liquid and mix. Adjust salt and pepper, sprinkle some dry pepper flakes if you wish and serve immediately.
