As simple as it gets, for me pasta is a total comfort food. It absorbs every flavor so well that it is almost too hard to mess it up. I love this combination of roasted tomatoes and onions and with some fresh basil to tie all the pieces together. This dish is even better the next day. If you don’t have heirloom tomatoes you can totally use regular grape tomatoes. This dish is wonderful for a simple dinner or even a party!
1). Preheat your oven to 375 F, preferably on a “roast” feature.
2). Place the halved tomatoes and sliced onion along with the fresh thyme on a wide baking sheet lined with parchment pepper.
3). Drizzle olive oil, salt and pepper, mix a little and roast until golden brown.
4). Drain the pasta, transfer the roasted tomato-onion mixture to the pot, sprinkle rughly chopped fresh basil leaves, and mix.
5). Adjust salt and pepper and serve warm or room temperature.
