Vegetarian Peas and Carrots Stew – A Meal That Kids Love

A healthy plant-based meal that is both kid and adult friendly!  I have the best memories eating this meal as a child and that is why I love making it for my kids at least once a week. They absolutely love it and never refuse a plate of that comfort food. I always serve it with some white rice which perfectly absorbs all that beautiful sauce. This dish reminds me so much of my childhood and this is my way to create these memories for my kids as well. My mom still makes it which chicken or beef, which is the original way. But I've learned with a few simple twists how to make up for the missing flavors of animal products. This meal is healthy,  easy, satisfying and absolutely delicious. Fill up your fridge with frozen peas. It is going to be one of your must-haves!

 

Instructions

1). Start with adding oil to your pot, sauté the onions and carrots until golden for about 5 minutes. Add the peas and water until peas are covered.

2). Add the spices salt, pepper, turmeric paprika, nutritional yeasts and tomato paste bring to a boil.  Mix, cover and reduce the heat to low and cook for about an hour until the peas and the carrots are really soft and the sauce is rich and flavorful.  Check for salt and pepper serve with white basmati rice. ( You may need to add more water during the cooking process so the sauce doesn't dry out)
