Vegan Mushroom Burger

I  absolutely love mushrooms and I very much love burgers .  So how about a mushroom burger?!  This is a delicious alternative to beef burgers in case you want to go lighter both on calories and fat.  Amazingly satisfying! Meat free, dairy free, healthy, hardy and also good-for-you. 

Instructions

1). Prepare ahead: 1/2 cup old fashioned oats+1/2 cup boiling water-mix and cover for 20 minutes.

2). Sauté the onions with the mushrooms for about 10 minutes until golden brown, then add the garlic and mix for about 2 more minutes, add the 3 Tbsp oats, mix and cover for 15 minutes. Then take out of pan, transfer to a bowl and mix with the soaked ½ rolled oats.

3).  Add 3 Tbsp flour OR 2 beaten eggs, 1 Tbsp chopped parsley,  some salt, pepper and paprika for your liking.  Mix, shape into patties (might need to use wet hands) and fry in a nonstick skillet with a little  oil for about 4 minutes on each side.
