Vegan Banana and Oats Cookies

If you are one of those people who have to have something sweet with your coffee, this could be the ultimate treat.  Oats are one of the most amazing things to put in our body especially in the morning.  This is one of the healthiest breakfast cookies you can indulge yourself and your kids, with no guilt at all.  It is full of fiber, good for balancing cholesterol level and it keeps us full for few hours. The combination of the bananas and chocolate is amazing. No need for eggs or flour to bind neither any extra sugar to sweeten.  I make sure to have them in my freezer at all times. I pop 2-3 of them in the microwave for about a minute or so and it feels as if they just came out of the oven. Never throw out bananas that are “too ripe”. Try this recipe and your body will thank you.


 1). Place all the ingredients in a bowl EXCEPT the chocolate chips.
2). Mix, cover with a bag or plastic wrap and let sit for 40 minutes.
3). Preheat your oven to 325.  Prepare a baking sheet lined with parchment paper.
4). Add the chocolate chips to the oats, mix and wet your hands to form the cookies.
5). Bake for 12-15 minutes until firm. (Don’t look to get them golden brown, they will get dry)
6). Let cool and either freeze or place in the fridge. Warm up before serving.
