For me salmon is always a great diner choice. It's fast, easy, healthy and very delicious. I chose a side of white basmatic rice to absorb the rich tomato garlic white wine sauce. It may seem fancy but it's very easy to make.
Heat up a wide nonstick skillet with olive oil on a medium heat. Dry the salmon portions with a paper towel and generously sprinkle salt and pepper. Sear for 4-5 minutes on each side. Remove and set aside.
In the same pan add the garlic and mix for about 30 seconds.
To the garlic, add the diced tomatoes and mix well for one minute. Add the wine and scrape the bottom with a wooden spoon. Sprinkle some salt and pepper to taste.
Reduce heat and add the capers, olives, lemon juice.
Insert the seared fish and continue to cook covered for 3-5 min on low flame. Garnish with chopped fresh parsley or basil.
