1/2 cup tahini ( I love this tahini brand)
1/2 cup cold water or seltzer
1 fresh lemon, squeezed
1/4 tsp salt
1/4 tsp pepper
2-3 garlic cloves, peeled
1/2 tsp sugar replacement
1 tbsp olive oil (optional) but recommended!
Tahini sauce is one of the best things in the world. It compliments almost every salad or dish. Perfect for a dip or as a spread on your pita or bread. It is packed with calcium, fiber, and amino acids! My kids absolutely love it. Even my 1-year-old baby. It is one of the must-haves on our weekly meals. This recipe is for a specific brand I use. That means that you might need to test the water measurement with the brand you choose. But these are the basics and my secrets:
1). Start by adding to your blender, or blender cup, the water, and lemon first. Then shake the tahini jar very well and att it as well.
2). Add the garlic, salt pepper, sweetener, and olive oil.
3). Blend until very smooth. Or until the garlic is completely incorporated into the sauce.
4). Give the sauce a taste to make sure nothing is missing, and adjust salt, pepper and lemon to your taste.
5). Transfer to a jar with a good lid, and keep in the fridge up to 5 days.
Drizzle it on your salads, falafel, or as a dipping sauce.
