Dry ingredients:
1 1/2 cups white spelt flour
1 1/2 tsp baking soda
1/2 tsp pink Himalayan salt
1/2 -3/4 cup coconut sugar/brown sugar
Mix in one bowl
Wet ingredients:
3 ripe bananas-mashed very well
1/2 cup water/almond/soy milk
1/4 cup organic coconut oil
1 tsp pure vanilla extract
Mix in another bowl
I love the combination of chocolate and banana in baking and I was looking to make some healthy snack for my kids to enjoy. I now find myself making these twice a week. I also make sure to put one in my husband’s lunch box so when he is hungry he doesn’t just buy junk. It is so easy to make, no need for eggs. Sooooo moist, sweet, and really delicious. If you have some bananas browning and you don’t know what to do with them, give these muffins a try. They will become your favorite.
1). Combine the wet and dry together, mix.
2). Transfer to a muffin pan lined with ,muffin papers, sprinkle 1/2 cup chocolate chips 1/2 cup chopped walnuts on top.
3). Bake on 350 for 20-25 minutes.
4). Check with a toothpick.
You can also bake it in an English cake loaf pan coated with a thin layer of oil or parchment paper.
