Tangerine Glazed Baked Salmon

If you happen to have plenty of tangerines waiting to be eaten and you’re looking for a creative way cooking with them, try this recipe. The fish absorbs all the flavor from the marinade and turns to a sweet festive summery light dish.

Instructions

1). Place all the marinating ingredients in a ziploc bag or bowl, mix well and place the fish to marinade in the fridge for one hour or room temp for 30 minutes.

2). Preheat your oven to 400F.

3). Place the fish on a lined parchment paper baking sheet with all the sauce around.  Sprinkle the one Tbsp sugar on top of the fish.  Bake uncovered for 10-15 minutes.

Note: In order to get some caramelization and color, I put the oven on broil for the last minute or two.  Do not leave the kitchen!  It can burn really fast.
