Dressing:
For me, a good salad is all about the variety of color and texture. This elegant masterpiece is no less than an unstoppable party of crunch and chewiness in your mouth! The dressing is light, and dominant at the same time, and the health benefits are simply what we need in order to nourish our body with health and joy. I encourage you to use a variety of greens and leaves. Here I used endive, arugula, romaine, and mixed greens. The more you combine, the more texture, and flavor. I also love serving it on a flat platter as opposed to a bowl, because I really want to show all the beautiful colors that it offers. Perfect for Rosh Hashana, fall, or to be honest, any day of the year. I truly hope you give it a try. Feel free to make the salad ahead of time, and the dressing in a little jar, and serve whenever you are ready to eat.
1). Prepare the dressing in a bowl and whisk very well until smooth and shiny.
2). Wash and dry your greens on a colander so that no water is intact.
3). Roughly chop the lettuce and lay with the rest of the greens on a platter. Add the onion, apple seeds, cranberries, and gently drizzle the dressing evenly.
