This is hard to believe that such a simple cake is so amazingly rich, moist and addictive! The fact that it's gluten free scares me even more, since I can’t stop finding excuses to stop “tasting” it. If your freezer is packed with almond pulp like mine, just go and make it. It takes just a few minutes to put everything together. As soon as you taste it you will instantly fall in love with it. And if you don't have almond pulp you can simply grind (very well) your own almonds in a food processor.
Preheat your oven to 350
1). Melt the chocolate chips with the coconut oil.
2). In a bowl beat the eggs and add the honey and melted chocolate and mix.
3). Add the almond pulp and cocoa powder.
4). Transfer to a baking dish lined with parchment paper.
5). Bake for about 30 minutes and check with a toothpick or a knife. If it comes out clean, it's ready.
