I always see this salad served in Israeli restaurants as one of the many appetizers. I love this salad because it is a wonderful addition to every meal! Packed with protein, fills you up, easy to prepare, colorful and of course delicious!!!
*2 cups cooked chickpeas (or from a can, drained and washed well)
*1/4 red onion, finely chopped
*1/2 celery stalk, finely chopped
*1/2 red bell pepper, finely chopped
*2 tbsp fresh chopped cilantro or parsley
*1 tbsp olive oil
*1/2 fresh lemon squeezed
*Salt and pepper to taste
*1/2 tsp cumin powder
*1 tsp apple cider vinegar (optional)
1). Drain and wash the chickpeas, allow all the water to drain. Place in a bowl with the rest of the ingredients.
2). Mix, adjust seasonings, let sit for 10 minutes and serve.
