1 handful fresh dill- chopped + Some chopped parsley
2 Tbsp olive oil
1 lemon +zest
Pink Himalayan salt
pinch of raw sugar
I can NOT tell you how addictive this salad is! Only few basic ingredients and you’ll find yourself eating half of the bowl before serving it. It is crunchy, lemony, sweet… reminds me of those salad bars that you find in the fast food shawarma and falafel stores. The only difference is that here you know what’s in it! And you know you can eat as much as you wish! Just go and make it so you know what I’m talking about.
1). Peel and slice the carrots as thin as you can in a food processor or mandolin. Transfer to a mixing bowl. Add the chopped garlic, lemon zest and dill.
2). Cut the lemon in half and squeeze very well on top of the carrots. Add the olive oil, salt pepper and and check if anything is missing.
