I love quinoa! It such a wonderful and healthy grain. So easy to prepare and the options of working with it are endless. I use it as a main or side dish and very often as a cold salad. This side dish is guilt free, so delicious and very easy to prepare. The fresh parsly takes it to another level. This is a must try!
1. Prepare the quinoa: Place the washed quinoa in a pot and add the boiling water, wait for bubbles, mix and lower the flame to the smallest possible. Time for exactly 15 minutes. Turn off the flame and leave the pot closed for another 10 minutes.
2. In a wide skillet place the oil and after few seconds add the onions and mushrooms. Saute until golden brown. Can take between 7-10 minutes. Sprinkle some pink Himalayan salt and black pepper and add the cooked quinoa. Mix for a minute or two and turn off the flame.
3. Add the chopped cilantro/parsley and check for flavors.
