Quinoa is so versatile, I just love it. I always cook it plain. Place in my fridge and whenever I’m hungry and in a hurry, I throw it in a skillet, or add it to my salad, and I enjoy a guilt free delicious meal. This is a very healthy dish, as it has chickpeas which are full of protein. It's really good for you!
1). Sauté onions for a few minutes, then add the grated carrot and continue cooking until golden.
2). Add the drain chickpeas and mix.
3). Add salt and pepper and after few minutes of mixing add the cooked quinoa.
4). Season with cumin, turmeric, onion powder and garnish chopped parsley or cilantro.
