Powerful Healing Mung Beans Pumpkin soup

This is by far one of the healthiest soups you can ever gift your body with. Whenever I feel like I need a boost of energy and liver cleansing I go ahead and combine these superfood ingredients to a whole one big pot of goodness!  This soup contains a big amount of plant-based protein from the healing mung beans which are known to fight inflammation and cancer.  The beautiful beets benefit your muscles, memory and cognitive functions. And the pumpkin chunks takes every bight to a world of comfort. Try this soup and fall in love with the gift of nature. Your body will thank you so much!



1).Start with sautéing the onions and celery until golden. Add the pumpkin and beets. Stir for 2-3 minutes. Add lots of water and bring to a boil.

2). Season with salt and pepper, and then add the mung beans.

3).Cook for an hour and a half, or until mung beans and barley are soft.

4).Just before serving, squeeze some fresh lemon into the pot. Adjust salt and pepper, and serve.
