Whenever I meet with family and friends for a picnic at a new park or place I offer to bring something healthy to eat. This way I know exactly what my family and I are going to snack on while outside of the house. I learned that once our tummy is full and we feel satiated we are less likely to crave unhealthy snacks that we and more importantly our children have no control to be exposed to.  I always make sure to bring a big quantity since something magical happens once that box/ container is open! Even kids who dislike salad or beans are excited to try new flavors and textures, and you know it’s great when they ask for more! This salad is so delicious! Lemon, garlic, cumin… Bring this with you and everyone will look forward to the next picnic!!! This salad should be enough for 4-5 people.



  • 1 big head romaine lettuce, cleaned and chopped
  • 1 can or 2 cups black beans, drained & rinsed
  • 1 avocado, cut into medium chunks
  • 1 big tomato, chopped
  • ¾ cup chopped cucumber
  • 1 cup organic corn, drained
  • 1/3 cup chopped cilantro
  • Some shredded cabbage (optional)


For the dressing:

  • 3-4 Tbsp good olive oil
  • 1 big lemon ZESTED then Juiced
  • 1 tsp pink Himalayan salt (or less to your taste)
  • ½ tsp cumin powder
  • 1 fresh garlic clove, crushed
  • ¼ tsp black pepper



1). Place all the ingredients in a bowl/ container.

2) Place all the salad dressing ingredients in a separate jar. Shake very very well!

3). Pour on the salad, mix, adjust flavors and serve.
