There is nothing like a good bowl of soup for dinner! This soup would warm your whole body in a healthy and delicious way. Using ginger in our daily diet is so beneficial to the digestion and immune system. Enjoy the warmth of spices and enjoy a combination of ingredients that are full of vitamins A, K, and C. You’ll feel light and refreshed and unconsciously finishing the whole pot waiting for tomorrow to make some more! The best part is that your kids would fall in love with it right away! (For Passover, You may use salt only and omit all the spices and still enjoy a clean refreshing and delicious soup)
1). In a big soup pot, place the onions and apple start to sautéing until translucent.
2). Add butternut squash, carrot and ginger and continue mixing for 10-15 minutes until everything becomes golden brown.
3).Add spices: salt, pepper, sugar, cumin, and cinnamon. Mix then add lots of water. Cook for 45 minutes or until butternut squash is fork tender.
4). Using a hand blender, blend the soup until nice and smooth. Adjust salt and pepper.
