Perfect for Hosting Roasted Veggie Platter

One of my must-haves, when I host a party or an event, is to have a roasted veggie platter!

It is inviting, healthy, colorful, delicious and the real advantage is that it can be served at room temperature.

It is a great side-dish and it is perfect on a salad.

The steps are very simple, pick any veggies you like!

 

Here I have :

  • 2  sweet potatoes, cut into 1/2 inch chunks
  • 1 butternut squash, peeled and cut into 1-inch chunks
  • 5 carrots, peeled and cut on the diagonal
  • 1 red onion, cut into wedges
  • 1 fresh garlic, cut in half
  • fresh thyme or rosemary
  • oil to spray
  • salt and pepper to sprinkle

 

Instructions:

1). Preheat your oven to 375 on a “roast” feature.

2). Place the veggies on a flat baking sheet lined with parchment paper.

3). Spray some oil and generously sprinkle salt and pepper. Mix a little and roast for 25-40 minutes until golden brown and for tender.

4). Serve on a bed of greens like arugula, kale, or lettuce.
