Who doesn't love potatoes?
Potatoes are one of those vegetables that whichever way you gonna prepare them they are going to be comforting and delicious. I always have fresh herbs in my fridge and often times even too much of them. Here is a healthy way to incorporate these powerful flavors into a side dish (that sometimes terns to a main-dish;) . The herbs and garlic together takes it to a whole new level of irresistible side dish.
Preheat your oven to 450
1). Cut the potatoes into 1-inch thick cubes and place on baking sheet lined with parchment paper.
2). In a medium mixing bowl place the oil, spices, all the herbs and mix.
3). Pour it on the potatoes and massages with your hands so everything is well coated.
4). Cover very well with aluminum foil and place in the oven for 45 minutes, then take out the cover and continue baking for another 10 to 15 minutes until golden brown.
