Oven Roasted Cauliflower

Cauliflower is one of my favorite vegetables by far.  This dish makes a beautiful side, or in my case, a wonderful, healthy snack.  It just does not always have a chance to get to the table!  It is addictive! And it's tasty even when it's cold.  Top your salad with it, and you've have a beautiful meal.


Preheat your oven to 375F on a “Roast” setting.

1). Soak the florets in salted water for 10 minutes.

2). Transfer to a colander and wash very well.  Let drain for 10 minutes.

3). Place on a sheet lined with parchment paper.

4). Sprinkle salt and pepper, some cumin, and garlic and drizzle olive oil. Mix a little.

5). Roast for about 25-35 minutes, until golden brown.  Mix once or twice during the roasting time for even color.  Garnish with fresh chopped parsley.
