When I need a 15- minute meal on the table, this rice is my go-to! Perfect for the whole family. The peas provide the protein, the turmeric keeps us healthy, and the kids ask for more! Win win. Fast, healthy, and easy.

Instructions

1). Soak the rice in water for 30 minutes. Drain and wash.

2). Heat up a pot over medium-high heat. Add the oil and onions, and mix for about 3 minutes. Add the celery and mix for another 2-3 minutes.

3) Add turmeric, rice, and mix until rice is all coated in yellow.  Add the frozen peas, add water, cover and bring to a boil.

4). One water is boiling, lower the heat to the lowest possible, and simmer for 18 minutes. Leave the lid closed for another 10 minutes. Open and carefully fluff with a big spoon or fork.

Feel free to add some fresh cilantro and a squeeze of lemon.
