As a busy mom of 3 toddlers who are all less than 4 years old (yes, I know… but I have twins:), a fancy proper breakfast is always a challenge! That’s why I always make sure to nourish my body with a quick and EASY snack to start the day right. These lemony tahini balls are powerful for the brain and heart! I always eat them with an apple or other fruit on the side for better vitamins and minerals absorption. This power snack is absolutely perfect for a gift for a nursing mama. Great for a party or to munch in the office.
p.s I forgot to coat them in coconut flakes!!! But please do.
6 tbsp raw tahini paste
2 tbsp honey or maple syrup
½ lemon, first zested than juiced
6 Medjool dates, pitted
1 cup raw walnuts
1 tbsp chia seeds
1 tbsp ground flax seeds (optional)
Coconut flax for coating
1). Place the tahini, dates, honey, lemon zest and juice in a food processor. Run for a minute until combined. Add the walnuts and pulse until you get a small-medium piece. You want to keep the texture!
2).Transfer to a mixing bowl. Add the chia seeds and mix until combined. Form nice bite-size balls and coat with unsweetened coconut flax mixed with some lemon zest. (I recommend using gloves in this process)
3). Place in a flat container and keep refrigerated for a week.
