2 cups buckwheat
2 cups water
15 mushrooms, sliced
2 onions, chopped
1 sprig of fresh thyme
4 cloves garlic, peeled
2 tbsp olive oil salt and pepper to taste
Today I'm going to share with you a super important dish from my kitchen! As someone who eats mainly plant-based, it is extremely important to know what are the best sources of consuming iron-rich foods that are important to our overall health and daily functioning. And today I picked the humble buckwheat! This dish is going to change EVERYTHING you think about buckwheat! It is BEYOND delicious and extremely good for you, especially if you are anemic and deficient in iron! Can't wait for you to try it. You have to trust me on that one!
1). Wash and drain your buckwheat in a bowl 4 TIMES!
2). In a pot, saute' the onions and mushrooms with a pinch of salt until golden brown, about 8 minutes.
3). Then add the drained buckwheat, mix with the onions and mushrooms, and scrape the bottom of the pot with a wooden spoon.
4). Add the water, mix well, add salt and pepper to taste, and bring to a gentle boil. Place the thyme sprig on top.
5). Wrap the lid with a clean kitchen towel and close the pot. Lower the heat to the lowest possible. (like you are cooking rice) PUT A TIMER FOR 10 MINUTES EXACT! Then turn off the heat and let it sit for 10 minutes more.
6). Open the lid, remove the thyme, and fluff with a fork.
Serve with Israeli salad or your favorite sides.
