Mashed Potatoes

One of the most decadent comforting side dishes ever.  This is seriously addictive and the truth is that I don’t really need a main course with it. I love it just as it is.  And you know what?  It is healthy too!


1). Cut the potatoes into medium chunks and place in a pot of water.  Bring to a boil and add 1 tablespoon salt. Cook until fork tender.

2). In a different skillet start sautéing the onions until golden brown, about 5 to 7 minutes.

3). Drain the potatoes and reserve one cup of the cooking liquids, then start mashing the potatoes until very smooth.  Add ½ cup of water for a smoother consistency.  (Add more if needed)

4). Mix the potatoes and onions and sprinkle some chopped parsley.
