For the garlic dill dip:
3/4 cup mayo (I use vegan)
1/2 lemon, squeezed
2-3 tbsp fresh dill, chopped
1 gralic clove, crushed
Salt and pepper to taste

Would this work with sweet potatoes swapped out for all/half of grated potatoes?
I Belive half grated would be great!
Can these be frozen?
I believe so. But personally, I don’t like to freeze potatoes because they chance the textue.
Very wet. Needed to squeeze out a lot of excess liquid with paper towels over a colander and it still took 3x as long to bake as your recipe.
Tasty but not like a latke more like a smashed potato.
