1 head Butterhead lettuce
1 cup hummus spread
3/4 cup cooked garbanzo beans
1/2 cup broccoli sprouts
3/4 cup shredded cabbage
1 tomato sliced
A drizzle of olive oil
Salt and pepper to taste
This is a quick and healthy, low-carb brunch idea. I sometimes feel like I want something more creative than a salad and at the same time, I don’t want to eat bread each time I crave hummus! That is why these lovely tacos are totally brunch-friendly as they fill you up without the guilt of eating something heavy. I would totally make them for a party since they are easy to prepare and easy to grab. Totally guilt-free, delicious and nutritious. Give it a try!
1). Separate and wash the lettuce and let drip dry while preparing the condiments. Use the big leaves only.
2). Start by smearing the hummus spread. About 2 tbsp on each wrap. Distribute the veggies equally on each taco and drizzle a dash of olive oil, salt and pepper and serve immediately.
Enjoy.
Note: for better flavor and texture you may take an extra step and pan sear the chickpeas on a hot skillet just for 2-3 minutes. Add cumin, paprika, salt and pepper until crispy.
