Lemony Avocado Arugula Salad – The One You’ll Never Get Tired Of!

This Lemony Avocado Arugula Salad is fresh, colorful, packed with flavors, and so easy to prepare. I love a good fresh salad with my meals, and this one is always a winner.

Arugula and avocado go so well together and the zest of the lemon takes every single bite to the next level! Make it for your next family dinner and it will become your new favorite one!

 

Ingredients:

2 Israeli cucumbers, cut into half moons

15 cherry or grape tomatoes, cut in half

1/2 red onion, thinly sliced 2 avocadoes, cut in 4, then sliced

6 handfuls of fresh baby arugula

 

For the dressing:

1 lemon, zested and squeezed

3 tbsp olive oil

1 tbsp apple cider vinegar (optional)

1 tbsp honey or maple

Salt and crushed Black pepper to taste

 

Instructions:

 

Cut all the veggies and set them aside, peel, and cut the avocadoes as well.

To assemble: Place the arugula in a bowl. Add the cucumbers, tomatoes, and onion. Add the dressing, mix, and place the avocados on top.

Mix gently one more time, and taste for salt and pepper.

Serve immediately!
