INGREDIENTS:
1 pack extra firm tofu
2 tbsp soy sauce
1 tbsp maple/silan/honey
Pinch of black pepper
For the sauce:
2 tbsp olive or avocado oil
1/2 cup cashews
1 big onion, diced
3 garlic cloves, chopped
3 tbsp maple/silan/honey
1 tbsp Dijon mustard
1.5 cups water
1 tbsp corn starch + 1/3 cup cold water
1 tbsp soy sauce
1 tsp paprika
Salt and pepper to taste
You'll be amazed how tofu can actually taste so so good. My kids love love love this easy weeknight meal. Perfect for meatless Monday by the way!

Preheat oven to 400 F.
Pat dry the tofu and slice into 1/2 inch slices.
Arrange on a baking sheet lined with parchment paper. Drizzle 2 tbsp soy sauce and 1 tbsp honey and bake for 15-20 minutes.
Meanwhile, let's make the sauce:
Heat up oil in a big-wide pan. Add the onions and mix until translucent. Add the cashews and garlic and continue mixing until nice and golden.
Mix all the rest of the ingredients in a bowl along with the water, except the corn starch. And add to the pot. Mix.
Remove the tofu from the oven and insert into the bubbly sauce.
Combine 1 tbsp corn starch along with 1/3 cup water and mix until smooth.
Add to the sauce. Cover the pot and simmer on low for 5 minutes until sauce becomes nice and thick.
Serve on a bed of rice.
