Kale has been heralded as a superfood for years now. But there's so much more to it than its superfood status. If prepared right, it's not just a nutrient powerhouse, but a veritable feast for your taste buds too! One of the best ways to enjoy kale is in a salad, but not just any salad, a vibrantly delicious, incredibly satisfying, and oh-so-good for you, Kale Salad with Golden Turmeric Tahini and Roasted Chickpeas.

1). Prepare the crunchy chickpeas and golden tahini and set aside. Roast in the oven on 350 until crunchy, or on a nonstick skillet for about 10 minutes with 1 tbsp olive oil. Place the tahini ingredients in a blender and blend until smooth. Place in the fridge until ready to use. Add water to your desired consistency.
2). Place the kale in a bowl, prepare the dressing, pour on top, and massage with your hands for 2 minutes. Add the onion, mix, and transfer to a serving bowl.
3). Drizzle a few tbsp of the golden tahini, top with some of the roasted chickpeas, add slices of avocado, and Enjoy!!!

Soak the kale in salted water first!

In my recipe, I used turmeric, not just for its warm, subtly earthy flavor, but also for its healing benefits. Turmeric contains a compound called curcumin, which has powerful anti-inflammatory effects and is a very strong antioxidant. Infusing the salad dressing with turmeric creates a vibrant, golden hue, and amps up the health factor of this delicious salad.
Tahini, a paste made from ground, hulled sesame seeds, adds a creamy, luxurious texture to the dressing. Besides providing a lovely mouthfeel, tahini is a healthy fat. Consuming healthy fats is crucial for your body’s absorption of fat-soluble vitamins. It’s also high in antioxidants and can help reduce inflammation and lower cholesterol levels.
