Kale Salad with Golden Turmeric Tahini and Roasted Chickpeas

Kale has been heralded as a superfood for years now. But there's so much more to it than its superfood status. If prepared right, it's not just a nutrient powerhouse, but a veritable feast for your taste buds too! One of the best ways to enjoy kale is in a salad, but not just any salad, a vibrantly delicious, incredibly satisfying, and oh-so-good for you, Kale Salad with Golden Turmeric Tahini and Roasted Chickpeas.

Instructions

1).  Prepare the crunchy chickpeas and golden tahini and set aside. Roast in the oven on 350 until crunchy,  or on a nonstick skillet for about 10 minutes with 1 tbsp olive oil. Place the tahini ingredients in a blender and blend until smooth. Place in the fridge until ready to use. Add water to your desired consistency. 

2). Place the kale in a bowl, prepare the dressing, pour on top, and massage with your hands for 2 minutes. Add the onion, mix, and                  transfer to a serving bowl.

3). Drizzle a few tbsp of the golden tahini, top with some of the roasted chickpeas, add slices of avocado, and Enjoy!!!
