I'm so proud to be posting this extremely delicious recipe which reminds me so much of my amazing country, Israel. Today is Israel's independence day. And while the signature food is actually Bbq, I chose to make this delicious plant-based rustic salad. A salad that has so much simplicity and so much authenticity. Simple, delicious just the way I remember it. I even took the time to film the video for it so be sure to check it out. The ingredients are basic, and the steps, as always, simple.
This recipe is for 1 person, but feel free to double the quantity! It goes fast.
Let's make it now!
1). Preheat oven to 350 F. Or 180 C.
Prepare a baking sheet lined with parchment paper and cut the bread or pita into bite-size pieces. Place on the baking sheet and drizzle olive oil, zaatar and salt. Mix and place in the oven. Bake for 8-10 minutes until gold and crispy. Remove from the oven and let cool.
2). Roughly dice the tomato and cucumber and place in a bowl. Chop the parsley and cut onion into half-moons and add as well.
3). Dress the salad in olive oil, lemon, salt, pepper, and everything but the bagel spice.
4). Add the roasted bread/ pita and drizzle with tahini.
5). Enjoy immediately!
