Have you ever wondered how to make the crunchy veggies that are displayed in the fast food shwarma and falafel stores? The ones that you snack on while they prepare your laffa:). The pickles are something that my grandma would always have in the fridge. Whenever my parents took us for a visit she would make a huge pot of this for us to take home. It is so easy to make yet so tasty and healthy! This is a family recipe that I’m happy to share with you. Just another perfect way to add veggies to your diet.
Ingredients:
1 head cauliflower, cut to florets, cleaned and washed
2 carrots, chopped into medium sticks
1 celery stalk, cleaned and chopped
1/2 -1/4 green cabbage, cut into big chunks, cleaned and washed
2 cups vinegar
2 tbsp curry powder
1 tsp turmeric powder
1-2 tsp pink Himalayan salt
Instructions:
Place all the veggies in a deep pot. Add the rest of the ingredients. Then add water just to reach the veggies but not above. Bring to a boil and immediately turn off the flame. Mix, check for salt, and let sit in the pot for couple of hours until completely cooled. Transfer to a glass container and keep in the fridge. Each time you take from it be sure to use a fork (it is just so tempting to stick fingers into the jar) in order to keep the freshness.
Carrot and celery..
Add cabbage and cauliflower, spices…
Add water…
Mix.. Cook.. Let cool…
Serve cold.
