Oats are such a big thing in my house. They are so healthy and so versatile. I incorporate them in as many recipes as I can. Mainly sweets, but also savory dishes as a substitute for bread crumbs or flour. Rarely do I buy sweet processed food from the store since I like to know what it is that I put in my mouth. And the great thing is that it is really easy to make this yummy granola breakfast.
Mix together:
3 cups old fashion oats
1 tsp cinnamon
1/4 tsp pink Himalayan salt
Then add:
1/4 cup organic coconut sugar
1/4 cup coconut oil
1/4 cup honey/ or maple syrup
1 tsp vanilla extract (optional, not a must)
2). Mix all ingredients, spread on a baking sheet lined with parchment paper and bake for 50 minutes.
3). Take out of the oven and add any of your favorite (chopped) nuts: Almonds, pecans, pumpkin seeds, etc. Bake for another 15 minutes.
4). Take out, mix, let cool completely!!!
5). Transfer to a zip-top bag and freeze for best freshness, or store in an airtight container up to 2 weeks.
