For the dressing:
Arugula is one of my favorite lettuces. It has its own unique peppery flavor and you don't need much to make a delicious salad out of it. Whenever I have leftovers from dinner, I know my lunch is going to be exiting. This time I had some black rice left, which is extremely healthy and really yummy. I combined some fruits I had on hand with a citrusy dressing and I love what I got! A light, healthy, summery and colorful satisfying meal.
Combine all the dressing ingredients in a large mixing bowl. Add all the salad components and mix. Serve immediately.
