Healthy Elegant Quinoa Salad

This is a healthy colorful and delicious salad that will surprise your pallet. The combination of the fresh mint and orange juice with the zesty dressing is just amazing.  Whenever I cook quinoa I always cook it plain, no spices or salt at all, since it can be used for many different dishes. This salad is one of them. It was invented from some plain quinoa I had sitting in the fridge.  I love playing with leftovers.


1). Place the 2 cups of cooked quinoa in a mixing bowl.  Add the red onion, orange zest, diced orange, dried cranberries, chopped mint, chopped parsley and half the amount of the chopped pecans.

 2). In a small mixing ball combine the dressing ingredients.  Whisk very well.  Pure over the quinoa, mix and transfer to a serving bowl.

3). Sprinkle the rest of the chopped pecans.

You may add some avocado and clementines. Delicious!
