Healthiest Pumpkin Spiced Energy Balls  

Fall-inspired Gluten-free, vegan, omega packed, comforting, Pumpkin Spiced Energy Balls!

When you need a bit of warmth and sweetness at the same time, these will do the job! Chewy, peanut buttery, delicious, and irresistible.

So what do we need in order to make these cozy treats?

Instructions

  1. Place the oats, almond flour, flax seeds, chia seeds, salt, and pumpkin spice mix in a wide food processor. Pulse for a minute.
  2. Open the lid and add in the: dates, peanut butter, vanilla, and maple syrup/honey. Once mixed well, add the milk and pulse one more time until a ball is formed.
  3. Prepare a baking sheet lined with parchment paper.
  4. Use some coconut oil to rub your hands, scoop about 1 tbsp worth from the pumpkin spiced mixture, and roll into 1-inch balls; place on the baking sheet and place in the fridge to cool while preparing to chocolate.
  5. Place the chocolate chips and coconut oil in a bowl. Use a double boiler or microwave and melt for 30 seconds. Remove, stir and place back for another 30 seconds, or so, until completely melted and smooth.
  6. Take the tray out of the fridge and use a spoon to drizzle on each energy ball until nicely coated.
  7. Sprinkle with some oats on top and freeze for about 30 minutes to set.
  8. Store in a container in the fridge for 1 week, or freeze them for up to 3 weeks.
