Greek Style Arugula Salad

I love arugula so so much. It is crunchy, peppery, and nutty! almost like a personality with a dominant character. This salad is simple yet satisfying and delicious. I love using kalamata olives but you can swap to back ones if you prefer. I’m not a cheese person, so if you feel like you need it go ahead and crumble some feta on top. (I would use a vegan type). Just as it is, this salad is a winner. Give it a try! This salad is enough for 2.

 

Ingredients:

  • 3-4 handfuls baby arugula
  • ¾ cup grape tomatoes, cut in half
  • ½ small red onion, sliced,
  • 1/3 cup kalamata olives
  • ½ English cucumber, peeled and sliced

 

For the dressing:

  • 3 tbsp olive oil
  • 1 lemon zested and squeezed
  • 1 garlic clove, crushed
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar (optional)
  • Salt and crushed black pepper to taste

 

Instructions:

1). Prepare the dressing in a small jar, shake well and set aside.

2). Place all the salad ingredients in a bowl. Pour some or all of the dressing. Mix lightly and serve immediately.
