We all heard the common phrase "eat your greens"! But as a mom of  3 little toddlers, it is sometimes hard to expect kids to chew on kale and lettuce on a daily basis (unless serving a green smoothie, which everyone is ok with).  That is why broccoli is our number one green at our house. The texture of this garlicky broccoli side-dish is so perfect. Not mushy, not too crunchy. Beyond delicious and goes with every humble dish. And on top of all that, broccoli has so many health benefits of antioxidants that fight inflammation in the body. It can also protect the body from many types of cancers as it comes from the family of the cruciferous vegetables. What's not to love?! This dish is a must-try!

Instructions

1).  Cut the broccoli into medium size flowerets,  clean well, (soak in salted water for 10 minutes), mince the garlic and set aside.

2).  Bring lots of water to a boil in a pot. Add 1 big tablespoon of salt. Add the broccoli and cook for exactly 2 minutes (I use a timer). Take out and put in a strainer, and wash under cold water.

3).  In a wide skillet or pan, add the oil and garlic and mix for 30 seconds (be careful not to burn). Add the cooked broccoli and season with a generous amount of salt and pepper. Mix for a minute and turn off the heat.  Serve hot or room temperature.

 

Notes: I using frozen broccoli, the boiling water will get cold instantly. You will need to cook it for about 4-5 minutes instead.
