Garlic and Ginger Asian-Style Edamame

 

In my house, this is one of the most amazing foods to snack on whenever we are in the mood for some yummy finger-food. Salty, crunchy, garlicky and addictive overall. Packed with plant-based protein and nutrition value. Really easy to prepare and enjoy for an appetizer or a quick snack.

 

Serves 2

 

Ingredients:

  • 1 bag of organic frozen Edamame
  • 1 tbsp grapeseed oil
  • 6 cloves garlic, grated
  • 1 big piece of fresh ginger (2 inches), grated
  • 2 tbsp tamari (organic soy sauce)
  • 1 tsp toasted sesame oil
  • 1-2 tbsp honey or sweetener of your choice
  • Black pepper to taste
  • Water + 2 tbsp salt

 

 

Instructions:

1). Bring a big pot of salted water to a boil.

2). Add the frozen edamame, cover, and cook for 8-9 minutes.

3). Drain the water and set aside.

4). In the same pot heat 1 tbsp oil. Add the garlic and ginger and stir until golden brown.

5). Add the drained edamame, then add the soy sauce, sesame oil,  honey and black pepper and mix for a few seconds until well coated.

6). Adjust seasonings and serve immediately.
