Here is the full breakdown for everything we’ve made:
For the roasted cabbage:
Preheat oven to 400f.
Slice cabbage into 6 wedges. Wash and remove all water.
Place on a baking sheet lined with parchment paper.
Drizzle 2 tbsp olive oil, sprinkle salt and pepper, 1 tbsp garlic powder, 1/2 tsp cumin.
Bake for 15 minutes, flip and continue baking until golden brown on both sides. About 15-20 minutes more.
Colorful Quinoa with Mushrooms and Peppers
[ INGREDIENTS ]
2-3 cups of pre-cooked quinoa
2 Tbsp olive or grapeseed oil
1 big onion, chopped
1 big red bell pepper, Jullianed
1 can of sliced mushrooms, rinsed or 10 fresh mushrooms
1 big handful of organic kale, roughly chopped
Salt and pepper to taste
Fresh herbs to garnish
[ INSTRUCTIONS ]
1). Using a wide pan or skillet place 2 tbsp oil and add the onions and peppers. Mix for 2-3 minutes, add the mushrooms and mix until golden.
2). Add the quinoa and Mix for 2 minutes or so, until heated through. Add the kale, add salt and pepper to your taste, mix a little more, garnish with fresh herbs, and serve.
This could totally be a meal-prep to work b.t.w!!!!
For the salad:
Place in a bowl 4 cups lettuce, 1 tomato, diced, 1 small cucumber, sliced, 1/2 red onion, sliced.
For the dressing:
3 tbsp olive oil
1 lemon, zested and juiced
1 tsp honey
1 tsp raw apple cider vinegar (optional)
Salt and pepper to taste
