2 onions, chopped
2 carrots/ sweet potatoes, grated
2 cups quinoa, washed very well
3 tbsp oil ( I use grapeseed or olive oil)
1 tsp organic turmeric (I like this brand)
1/2 tsp black pepper
1 tsp pink Himalayan salt (more or less)
4 cups boiling water
If you are dreaming about having your family enjoy, and specifically your kids, quinoa without fussing about it, then you HAVE to make this DELICIOUS quinoa meal. This easy one-pot dish is ready in only 30 minutes. Loaded with healthy carbs and plant-based proteins and of course the healthiest spice on the planet, the humble turmeric!
This dish is to be enjoyed hot, as soon as it's ready, with a fresh chopped salad on the side, and maybe some avocado as well. No need for more!
All quinoa heaters immediately turn to lovers. Lol. This dish is legit sooooo good!
1). Heat up oil in a medium pot. Sautee the chopped onions with a sprinkle of salt, add the carrots/ sweet potatoes and mix for about 5-8 minutes until nice and golden. Add turmeric, salt, and pepper and mix for 30-40 seconds. Add the washed quinoa, mix a little and add the boiling water.
2). Bring to a boil, and lower the heat to the lowest possible. Cook for 25-30 minutes. Let sit for another 10 minutes and serve.

Note: I like to sprout my quinoa. I soak it in lots of water overnight. It’s much healthier and tastier. In that case, I don’t put 2 cups of water for each cup of quinoa. I do one and a quarter or one and a half. Depending on how wet you like the consistency.
