Easy and Delicious Open Faced Avocado Sandwich for Breakfast

I don't know about you, but when I eat bread for breakfast, I'm a happy person. I saw these little mini pitas at the market the other day and I thought it would be great to send with the kids to school for breakfast or just snack on-the-go. And when it comes to my breakfast, I absolutely love avocado in a pita or bread.  But it was a little hard to stuff them with everything I had in mind. So I simply decided to top them with simple ingredients I had on hand and it happened to be a simple, yet, an AMAZING filling and satisfying breakfast. Hope you give it a try.

Instructions

1). Warm up the pitas in the oven or microwave for a few seconds.

2). Mash the avocado and sprinkle some salt and pepper and distribute equally on top of the pitas.

3). Add the chickpeas, red onion, cilantro, and drizzle some olive oil.

* Feel free to add crushed pepper flakes, sliced jalapeno, hot sauce... whatever makes you happy!
