This salad is one of those staple foods that I can sit and eat and eat and eat until the bowl is completely finished! There is something addictive about the amazing combination of the salty cashews and the sweet cranberries with the addition of the red onion that balances the flavors all together! I know I'm not inventing the wheel here but this salad is so yummy that I had to make the dressing a bit healthier than the usual one. I've exchanged the regular old mayo with a vegan one. I also realized that I don't need so much dressing to enjoy the creaminess since the more the salad sits the better it gets. So here is a way to save tons of calories and unhealthy fats. Adjust dressing as you wish. Double quantities if you need to. Enjoy!
1). Clean your broccoli by soaking in cold salted water for 10-15 minutes. Transfer to a strainer. Wash under running water and allow the water to run while making the dressing.
2). For the dressing, combine all the ingredients, and mix the rest of the salad ingredients.
3). Pour the dressing on top. Adjust flavors. Allow to sit for 10 minutes and serve.
