Corn schnitzel anyone???
My favorite childhood food!
High in protein, baked, kid-friendly, adult approved, delicious!
I have something similar in my
cookbook, but this one is only 6 ingredients, and it's so so yum and quick!
My kids kept asking for more and more. I served it with
sweet potato fries and it was such a fun party!
1). Place the tofu in a food processor along with one of the drained corn cans. Add flour, garlic, soy, ketchup, salt and pepper, and blend until smooth.
Add the rest of the corn, mix.
2). Prepare a plate with breadcrumbs and sesame seeds, salt and pepper, and a parchment-lined baking sheet.
Preheat oven to 400 F.
3). Use a wet 1/4 cup measuring size, scoop the batter into your wet hands, or straight to the breadcrumbs, coat gently, and place on the baking sheet.
4). Spray with oil, I used grapeseed. Bake for 25-30 minutes until golden brown.
5). Remove from the oven and allow to cool for 10-15 minutes.
